#10 Start a retirement fund

Status: Have added some more to my Roth savings. Not an easy thing to do as then I do put things on my credit card....

Plan of Action (POA): Keep adding to my Roth Savings account while keeping the credit card balance as low as possible ($0). Budget more by taking cash out at the start of each month for each of the categories I spend money. Not buying any clothes, shoes etc., until October....

#2 Climbed Mt. Bierstadt


Status: Have not climbed Longs...BUT, did climb Mt. Bierstadt which is 14,060 feet. Not bad! I did not make the climb with MK as he had a last minute interview come up but I was telling another long-time friend about the 30list and my desire to do a 14er and she said she and her boyfriend had been talking about doing one for awhile so, we three (plus the dog!) climbed Bierstadt three weeks ago.

The mountain was a veritable anthill as probably 500 others made the climb that day too. I knew I was in Colorado when people were calling out to their dogs, “Aspen, come girl!” or, “Pica!” and a lab or retriever of some sort came their way. The climb was I admit, not easy for me; nor was it impossibly hard. At the end of the uphill I did have to deal with a fair amount of light-headedness as I had flown from sea level less than 48 hours before. At the end I just went slower than the rest of my party and they were very good about waiting for me. I did 10 and 1 intervals like I do when I run so I would climb up for 10 minutes and then allow myself a rest for a minute. This worked for me.

It sounds strange but my favourite thing about the hike wasn’t reaching the top but experiencing the changing view along the way. And making the climb with an old friend.

Will I take this 14er thing up in a hardcore way? Most likely not as honestly, while beautiful at the top, I had a feeling that the tops of mountains were meant for people...but there was something amazing about the actual process of the climb with other people, the companionship, the goal, etc., that I liked. And I still have it in my head to do Longs.

Oh, my hiking boots (Keenes) on the way down the mountain killed me. They were great going up but coming down, they were far too wide in the toe (I have long feet – size 12 in womens) and had to get men’s shoes which meant they were too wide in spots. I bought them from Mountain Equipment Co-op. Great company. They took them back for a full refund when I explained the problem. I’ll certainly get the new pair there too after the first of the month.

Plan of Action (POA): Stay in shape, buy new hiking shoes and plan on doing another 14er next summer and possibly Longs in August...

#30 Learn to make excellent chicken enchiladas


Status: I am well on my way with this way thanks to EH. Being in Colorado means that there is no excuse for not trying out the recipe that EH shared with me. The grocery stores actually sell corn tortillas here (compared with Edmonton where I find it harder to come by them) and fresh roasted chilies are to be had. I made the Lazy Woman’s Enchilada casserole two weekends ago with the help of my Mom and SV with modifications for my parents’ tastes (e.g., no cumin – which I would use lots of for myself!!!).

Here is Ellie’s Lazy Woman’s Chicken Enchilada Casserole:

INGREDIENTS:
cooking oil
1 onion chopped
2-3 cloves garlic minced
8-10 roasted green chilies peeled & minced (2 chilies per person)
1/2 to 1 tsp oregano
2 shakes of cumin
1 can cream of mushroom soup
1 can evaporated milk (can also use some half & half or light cream for a more decadent version. Or milk and cream if you don't have evaporated milk)
Grated cheese-- lots- a few cups grated maybe?. mmm...
15-18 corn tortillas***

>In med/large sauce pan, saute onion and garlic in a couple tablespoons oil on med heat until onions are soft/translucent.
>Stir in chiles, oregano, and cumin. Cook for just a bit (a min or two) to let flavors meld.mmm....
>Add cream of mushroom soup and evaporated milk gradually, stirring constantly.
>Allow to simmer at least 15 minutes while stirring frequently!**
> if sauce is too thick, add milk a little at a time to desired consisency. If it gets too thin just let it simmer a bit longer.

For chicken enchiladas, you simply need shredded chicken:

Boil chicken (breasts, parts, whole chopped up-- what have you) with 1/2 chopped onion, oregano, couple cloves garlic, and 2 bay leaves. Cover chicken with water or broth and simmer until chicken is tender and falling apart (30 min-1.5 hr? depending on chicken amount). Remove chicken and use fork to shred apart.
**You can add some of the shredded chicken to the sauce and allow it to simmer longer, if desired. Save most or all of the chicken for the actual enchilada assembly.

>Add half of cheese into sauce and allow to melt. Tear 15-17 tortillas into 'chip size' pieces. Lightly sauté tortilla pieces in large frying pan-- usually in 3 batches. Pieces should become soft, and never fry hard. Keep heat medium-low to reduce hard frying.
>In rectangular casserole dish, layer cheesy sauce, batch of tortilla pieces, (and chicken, optionally), sauce, tortillas, chicken, etc. End with sauce, and cover the top with the other half of the shredded cheese.

>Bake in 325 oven (or so) until heated through and cheese on top is melty. (if it gets too burn-y on top too quickly, cover dish with foil).

#1 Finish my PhD

Background: I have always known I would pursue a PhD the way some people know that they will be rock stars. Not as cool, it’s true, but when times are rough I have to admit that I always feel that I am on the right road or at least close enough to not feel too lost.

Status: I have finished my first year and have one section of my reading list fairly well sorted out. I have bought 5x8 index cards and a box for said index cards. I am keeping track of notes and my own insights as my supervisor suggested (thanks for the tips on how to prepare!). I have printed out some papers. I have even read a few and taken notes on them. I did send out a draft of my reading list without the proposal. I feel guilty for not having read more up to this point.

Plan of Action (POA): Keep reading and taking notes on papers while I am here in CO even though I am not as productive as I would like to be. Accept my state of un-productiveness and get some good rest and enjoyment with family and friends in preparation for an intense five months of 6 and 7 day weeks starting in August. Draft a proposal to send out by July 30th.

#10 Start A Retirement Fund

Status: Done. Sort of. When I arrived in CO this summer, I went to the library and checked out a number of books on financial planning for women, for young people, etc. Everything convinced me that I should start saving RIGHT NOW as these years when I am young are key (as in tens of thousands of dollars key when I am older) even though it might be very hard to do so financially speaking. For the past few years I kept thinking “When I have $1000 saved up I will put it into a Roth IRA since that is the minimum amount needed to start a Roth at my credit union.” But, even when I did have $1000 saved up I did not do that so clearly that plan was not working. So I visited my credit union and it turns out they have a Roth savings account! So I opened one. With $100. It is a start. I have to email someone to have money transferred into that account and once it is there I cannot take it out without being penalized which is a good incentive for me NOT to transfer it to cover the cost of clothes etc.

Plan of Action (POA): Keep adding to my Roth Savings account EVERY month even though it feels like a huge burden up to the maximum amount each year ($2000). By the time I am 30, put something into the S&P500 and also invest in a “green” mutual fund or something of that nature.

#2 Climb Longs Peak

Status: Ok. I am sitting in a coffee shop in Lakewood Colorado and have been to the mountains only once for a wedding in the last three weeks. MK and I decided to try to climb either Mt. Bierstadt or Mt. Lincoln this summer as Longs Peak is still snowy this time of year and we would need technical equipment. I actually was feeling like I was in climbing condition when I arrived in Colorado three weeks ago but inordinate amounts of eating out, eating ice cream and not walking to and from school have now made me a “size vacation” instead of my energetic “size inspired”.

Plan of Action (POA): Email MK to firm up plans to camp on July 10th and climb Mt. Bierstadt on the 11th (that is my first choice). Email KC the plan too to see if she wants to join us (the more the merrier!). Try to at least maintain this level of fitness and then just suck it up the day of the climb.

#9 Stay out of debt

Background: …I mean pay off my small credit card debt racked up this month on hair and clothes (but I feel fabulous!). And then stay out of debt.

I have been blessed in so many ones but one of the greatest gifts ever given to me by my parents is no student-loan debt. I stayed in-state for my undergrad which made university financially feasible with the support of my parents. And of course, in grad school, you get paid oodles of money to GO to school! Yay! No really, I have been really lucky in this regard and though my car is 11 years old (it’s paid for!), I have no permanent roots of my own (no mortgage!) and no savings (the experience of living in new cities every few years does come at a cost), I don’t have any real financial obligations - except to my clothes habit. See below.

Status: Current credit card debt includes an airfare that will be reimbursed to me in October…the rest of the balance is less than $300. And rent is drastically reduced from here on out…again got lucky in many ways (though my Dad always says that luck is when opportunity meets preparedness).

Plan of Action (POA): Pay off my credit card. Live at home for a month to save on rent. Go over my budget spreadsheet with my Mom and ask for her help. Maybe try those mason jars of cash like they use on the TLC show “Till debt do us part”? Draft a savings plan. And critically, stop buying fantastic new clothes that are on sale (may I just say for the record, that I went nearly two years without splurging on clothes before I started doing that these past few months?). Hit up the dollar store and Ikea more (did you know that Ikea has wickedly inexpensive food and $1 frozen yogurts?!?).

#2 Climb Longs Peak

Background: The idea of mountain climbing has been percolating for many years. Things have finally risen to the top to prompt me to pursue this notion seriously. And now the damn bee is my bonnet and I really want to do this…

Status: My friend MK has agreed to do this with me. His girlfriend might join us, too. Which would be awesome. I am trying to round up a number of people but I think this sort of activity is the type of thing that is easier to toss around than actually do. I have known MK since third grade. Twenty years in fact! MK did the whole Peace Corps thing, lived in a hut etc., so I am hoping his expertise and sense of adventure make this climb realistic.

I don’t know what date we would go exactly but pretty soon? I leave for CO this weekend so…

Have been doing some reading and have come across some great sites:

I did not realize that Longs Peak was classified as a difficult climb or that it was Class 3. The pictures of the face of the narrows and ledges on the route description intimidate me. I rather wish I had not looked at that before hand. But being prepared is half the battle. This way I can visualize the climb before going on it.

Some folks summit before dawn to catch the sunrise. Wow.

Also, fitness-wise I am doing well right now. I am running 3-4 times a week with one longer run on the weekends so I feel good in that regard but I should be careful of altitude sickness since I am no longer at 5280 feet and instead reside about 2100 feet above sea level…

Plan of Action (POA): Buy some stuff?

Firm up plans when I get home to Colorado. Remember what I wrote to MK in the last email: “Ok, I just looked at the route - Longs Peak is actually classed as difficult...I did not know this. I wish I had not known this - I it kind of freaks me out. Plus I looked at the pictures of the climb - it looks intense. But we can do this. I think is gonna be awesome and if for some reason the conditions or weather is bad, there is no shame in having tried and not summiting - it is after all, about the journey; not the destination.” And, drink lots of water!

#1 Finish my PhD

Background: I am supposed to be reading every day for my candidacy. I think about reading everyday…

Status: I did send out a draft of the reading list last Thursday (about a week later than I had hoped but better than never!).

Plan of Action (POA): Scan articles today. Re-assign readings to calendar for June & July. Make sure I have readings before I head down to CO this weekend.

#30 Learn to make excellent chicken enchiladas

Background: This one is a little bit unbelievable and serendipitous all at once. Yay! Once upon a time, a girl from Colorado moved far, far away to the East Coast to work at an Ivy School. There she met another girl also from the southwest, down New Mexico-way. They would reminiscence about wide blue skies, the smell of pinion and the glory of fresh green chilies. The girl from NM was kind enough to let the CO girl in on a little secret: her Mom's enchilada recipe. The CO girl was young and naive at the time and let the recipe and friendship swirl away with time and distance and life, in general. But when she made her 30 list, she so dearly wondered about *that* recipe and that NM girl. Not knowing how to find the girl (who she had googled with no luck) and not having written down the recipe, but remembering the success of those enchiladas and the sheer joy of that recipe, she put it on her list of things to do before 30 never imagining she would ever capture the joyfulness of the enchiladas that warranted a spot on the 30 list...

Status: A cryptic comment left on this very blog alluded to *that* recipe. How could someone out there KNOW about *that* recipe?? I hadn't talked about it or asked around for the recipe; *that* recipe existed someplace else, almost in another life for me....I wondered at the comment...at the reference to the Halloween party (remember the horchata?) but thought it could not be possible that someone would actually be offering me *that* recipe and it be the one I remembered, from the NM girl...So I responded to the comment; a little cautious and skeptical but mostly curious. The commenter posted a long comment. With...

wait for it....wait for it...

*that* recipe!

Know-How at Thirty

Someone wrote a list AND a book detailing thirty things one should know how to do by the time one reaches thirty. I don’t want to complicate my own list but for consideration here are 30 things one should know how to do by 30:
1. wrap a present
2. start a successful fire in a fireplace, at a campsite, and in a barbecue
3. finish a piece of furniture
4. get a raise
5. order wine at a restaurant without getting stiffed
6. parallel park in three breathtakingly beautiful movements
7. dance a “slow dance” without looking like an idiot
8. use a full place setting properly, including chopsticks and Asian soup spoons
9. clean your place in under 45 minutes, when friends, relatives, or prospective lovers are coming by unexpectedly, and soon
10. hold your liquor
11. cure a hangover
12. do the Heimlich Maneuver

Things I am capable of on this list: 1, 2,3, 6,8,9, 10,11,12,13, 14 (theoretically), 15 (although I still ask for help), 16 (someone told me it should sigh like a woman – that I cannot do, but I don't feel intimidated by the prospect of opening a bottle of champagne), I feel that #30 on my own list might qualify as good signature dish for 18, 20,21,22,23,24, 25 I do though not well,26 I can do, 27, 28 (in my mind anyway, dogs and cats love me) and 30.

I am not worried about 4 from this list. My Dad always told me to do what makes me happy and the money will follow. I don’t quite get 5 – what happens when you order wine and get stiffed? I can box step but that doesn’t really pass muster for 7. On 17: it has never occurred to me to send a drink to someone’s table. I am more of a breakfast-out person and somehow sending drinks to peoples’ tables at breakfast is weird...but you never know. I will never be able to do 19. I have tried many times. It just ain’t gonna happen for me. I can practice 25 this summer as KVL is having a baby in a matter of days! I don’t know a technique for 29 but it can’t be that hard to help someone out of car....is this list more for men?

#1 Finish my Phd

Background: The road to this point has been both divergent and direct. Right now, I am enjoying the journey.

Status: I have a committee selected and a reading list drafted.

Plan of Action (POA): Send out a draft of my reading list to two of my committee members by Wednesday. Send out a more comprehensive draft of reading list with proposal by June 15th. To do that, I need to think about the kind of written component I would like for my qualifying exams... Read. Read every single day.

#19 Run the Bolder Boulder

Status: I was all set to register for the ING half marathon but I realized that I will be away that week participating in a training program in my field (important for #1 Finish my PhD).

Plan of Action (POA): Look into a different run for the fall. Start doing longer runs on the weekend anyway.

#11 Publish 3 first-authored papers

Status: The manuscript I submitted about a week ago was rejected without review. Bummer. They have a high submission rate and accept only 15-20% of submissions. Well, if it was easy, I wouldn't need three years (although, this paper has been in the works for two years post-MSc so this remains an ambitious goal).

Plan of Action (POA): Submit to another journal. Tomorrow, I will start to reformat the manuscript.

#19 Run the Bolder Boulder

Background: I ran cross country in high school. I was by far, the slowest member of the team - or at least in the bottom three. Though I was terrible time-wise, I did enjoy the actual act of running. I started running again last summer and am doing so fairly consistently now. I wanted to run in the Bolder Boulder because I like the name and I grew up hearing about it (being in Colorado and going to school in Boulder and all). It never occurred to me to participate in such a race of this sort. Or any race at all. But I have discovered this might be something I would like to do. I would like to try at least. And Boulder is such a lovely city.

Status: I mentioned this goal to my roommate who has run marathons and half marathons. She has suggested I run the ING Edmonton half marathon in August. I am reading up on this (she lent me Galloway’s Marathon – you can do it!) and considering it...which I never thought I would do. It certainly would be good training for the Bolder Boulder next May.

Plan of Action (POA): Assess my motivation. Do some reading and research. Try a longer run next weekend.

#11 Publish 3 first-authored papers

Background: Publishing is what academics do. I am training to be an academic. Publish papers I must...over the last two years I have been generating a manuscript for publication based on my master's thesis. I have had the good fortune of working with excellent coauthors. I am not sure if 3 papers is too ambitious, lazy or just right. I want these three papers to be gems. But that might be expecting too much. But then, if I don’t expect each to be a gem, I won’t be as likely to produce gems, either.

Status: I submitted the aforementioned manuscript from my master's thesis to a journal last Wednesday....

Plan of Action (POA): Wait to hear about said manuscript. Continue thinking of, and designing experiments for PhD work which one would hope, will translate into papers for publication. Keep reading the APA manual. Strive to make every word tell as Strunk and White suggest.

#28 Find the ten best breakfast places in Edmonton

Background: Breakfast is the best meal to eat out. It’s usually edible even if not brilliant cuisine, can be nuanced which makes the possibilities for good creative fare endless, is affordable and feels like a luxury. I have found some mighty fine breakfast places on my journey. Favorites include Dot’s Diner in Boulder, The Yankee Doodle in New Haven, Demitasse in Victoria and The Antik Café in Ankara. Road-trip wise the best breakfast I ever had was in a café in Farmington, New Mexico. I can picture the restaurant in my head and taste the green chili sauce but cannot, for the life of me, remember the name of the place…maybe I can convince SV to drive south first on our way back to Edmonton this summer…

I love a good cup of coffee, clean silverware, friendly servers, food that elicits “so good!”s and a relaxed atmosphere. I have been in Edmonton about 8 months and I will be here for at least two more years so this is a feasible undertaking.

Status: So far, I have enjoyed a number of contenders in town including Sugar Bowl, Barb & Ernie’s and brunch at Murietta’s. I want to be systematic about this however, so any place is fair game from here on out.

Plan of Action (POA): Recruit people to go to breakfast with me and solicit suggestions for candidates for the list.

#2 Climb Longs Peak

Background: I am from Colorado and spent my first 20 years there. I have hiked a fair bit but have never climbed any of the fourteeners. Growing up, my Dad and I always said we would do Longs Peak together one day. He sent me an email a few months ago mentioning the idea again…and it stuck. I am determined to make this climb this summer, if possible. I don’t think my Dad is up for it anymore (getting old is a bitch he tells me) but I am soliciting adventurers among my friends in Colorado.

Why would I want to climb a mountain? Honestly, this sort of thing didn’t appeal to me until the last few years. I used to rebel against being too outdoorsy in a REI-wearing, paddle-sporting, Powerbar-eating way as a statement against all the people clamoring for a certain lifestyle in Colorado who, I felt, invaded the state, drove up housing prices and made being a tea-drinking, vigilantly-recycling, fresh-mountain-air-loving type trendy instead of just plain sensible.

I am over that now, though. Bring on the fancy outdoor clothes and the overpriced organic oats and let’s climb us a mountain! Wait! I have been to the top of a fourteener – in a car. The summit of Mt. Evans is accessible by car in case anyone wants the thrill of the view but not the climb… I find the climb is what I long for at this juncture in my life.

Status: I have emailed some friends about this idea and so far, I have one taker – assuming he is in town the same time I am. I have looked at some websites like this and this and I am in “training.” I walk twice a day, run three times a week and do yoga three times a week. I figure that should be good for Longs Peak. The plan is to go in late June of THIS year, i.e., in a little over a month. Also, I invested in a new pair of hiking boots about a month ago. The price almost deterred me but when the salesman asked how long I had my last pair (10 years) I was convinced it was a good investment.

Plan of Action (POA): Keep “training.” Read up on the climb itself. Remind my climbing buddy once a week of how worth it waking up at 1am will be when we summit the mountain later that day.

The 30List

This list was inspired by a link posted on The Happiness Project. I love making lists and things which impose structure so I thought the exercise a good one. I found this surprisingly easy. One of my main goals was to list things that were attainable while still being items that would help me to grow and expand as a human. I admit #29 is a little far fetched; the list needed some bars set high.

My hope is to chronicle here, my journey through The 30List.
